Darryl, The way it works is everyone eats what they want. I bring enough food for everyone. I will need a count of the number of people attending by the Tuesday before the event, so June 7th or there abouts. I know from experience what I need and have not run out at any event I have done. I do not have soft drinks in the proposal. The amount needed with vary greatly with the weather, real hot and 5 or 6 may not be enough, rainly 1 or 2 would be plenty. If you want to deal with it, please add $4.00 per person for 5 hours. The 4 hours the pavillion will be open and then the hour it will take us to clean up. And I can leave some behind as the situation dictates. I am fine with 2 1/2 to 3 hours with the food. You can tell me the times you want food as we get closer. And if we still have food and people are still eating or arrive late, I am flexible and will be happy to feed them. As far as a deposit. I am not worried about it too much. I know from running my reunion, the money comes in slow at the start and then floods in at the end. A $250.00 deposit by the fall is good for me and later if the money comes in slowly. I like as much as possible to do hand shake deals, the way true business should be done with honest people. How times have changed. It used to be enough. I think covers it for now.
